Upside Down and Pineapple-y
Made a delicious pineapple upside down cake tonight - thanks again for another stellar recipe, Isa Chandra Moskowitz (from her cookbook 'Isa Does It'). It's not too sweet, tastes like candied pineapple and cinnamon, and it goes great with ice cream.
Upside down cakes are kind of funny to me. We usually don't purposefully do things backwards or upside down or sideways. Trying to do things the 'right' way the first time relieves stress and unnecessary frustration.
But somehow, sometimes, life goes upside down anyway. The degree of upsidedownedness (because that is a word) varies greatly, but I think we can all agree that life quite often does not happen the way we hoped for or expected.
To Forrest Gump, a box of chocolates is a metaphor (okay, technically a simile...) for life. Tonight, for me, life is like this vegan pineapple upside down cake. Despite my vigorous application of the nonstick spray to the pan before putting the batter in, when I tried to 'upside right' the cake, it didn't come out in one piece. I over-baked it a little, and I had to reintroduce some of the pineapple rings into their spots. But heck, it was tasty.
Most of the time, life feels upside down and pineapple-y, but maybe that doesn't always have to be a bad thing. Maybe it's just life - sometimes sweet, occasionally a little dry, and slightly broken. But at the end of the day, a broken cake tastes just as delicious.
